Creamy Turkey Wild Rice Soup

2 tsp. vegetable oil
1/4 c. chopped onion
1 cup diced celery
1 cup diced carrots
1 cup diced smoked turkey (or regular turkey)
1/2 cup uncooked wild rice
1/4 tsp. pepper
1 tsp. dried tarragon leaves
3 1/2 cups chicken broth
12 oz. can evaporated milk (Can be fat-free)
1/3 cup flour
1 cup frozen peas, thawed

Cook onion in oil for 4 minutes, or until tender. Put onion, celery, carrots, turkey, wild rice, tarragon, and pepper in crock pot. Pour broth over top. (You can also cook this over the stove at a low temp. once heated, until vegetables are tender and rice is cooked.) Stir in peas the last 15 minutes of cooking. Mix milk and flour; stir into soup. Cover and cook about 20 minutes more or until thickened. (This soup is so delicious and creamy, and one of my favorites!)
