EASY REUBEN CASSEROLE

IN THE MOOD FOR SOMETHING DIFFERENT, BUT DELICIOUS? HOW ABOUT THIS CASSEROLE? IT IS SIMILAR TO THE REUBEN SANDWICH! I HAVEN'T MADE THIS FOR YEARS, BUT SURE USED TO AND HOPE TO SOON! IT'S ONE OF THOSE FORGOTTEN OR LOST RECIPES THAT ALL OF A SUDDEN TURNS UP! IT IS GREAT!

20 oz. bag frozen hash brown potatoes
1/4 tsp. salt
1/4 tsp. pepper
1 1/2 pounds sliced lean corned beef
1/4 cup Russian dressing plus additional on the side, divided
16 oz. can sauerkraut, drained
8 slices Swiss cheese

Spread hash browns in a greased 13x9x2-inch baking dish. Season with the salt and pepper. Bake for 15 minutes. Top with the corned beef, slightly overlapping slices. Spread Russian dressing on top. Spoon on sauerkraut. Cover with Swiss cheese. Bake 15 more minutes. Serve with extra dressing on the side.
