Hot Parmesan Artichoke Dip

14 oz. can artichoke hearts, drained and chopped
1 cup grated Parmesan cheese
1 cup mayonnaise
1 clove garlic, minced (optional)
2 Tbsp. chopped tomatoes
10 oz. pkg. frozen chopped spinach, thawed and well-drained (optional)
1 cup mozzarella cheese (optional)

Mix first 4 ingredients. (Can add spinach, if desired) Spoon into a 9-inch pie plate. Bake at 350 degrees for 20-25 minutes, or until hot and bubbly. (During last 5 minutes of baking, you can sprinkle on the top mozzarella cheese, if desired.) Sprinkle with tomatoes. Serve with crackers.
