3/4 c. egg substitute
1/2 c. fresh lime juice
2 tsp. grated lime rind (from about 2 limes)
6 oz. graham cracker pie crust
8 oz. container fat-free Cool Whip, thawed
Process first 4 ingredients in a blender until smooth. Pour mixture into pie crust. Bake at 350 degrees for 10-12 minutes or until golden. Let pie cool completely, and top with Cool Whip. Garnish with sliced limes and/or grated lime curls.
(My mother loves key lime pie. I just found this in a magazine, and it is 'fat-free.' My daughter wants to make it for her for Mother's Day! I will let you know how it is! Sounds like it will be delicious!)

This pie was so delicious!! Kemp made it for Mom for Mother's Day for the first time, since Key Lime Pie is a favorite of hers, and it was creamy and full of lime flavor and scrumptious, and best of all, fat-free! Great recipe! I will definitely make it again!
