Perfect Chocolate Chip Cookies

4 1/2 cups flour
2 teaspoons baking soda
1 teaspoon salt
2 cups butter, softened
1 1/2 cups packed light or dark brown sugar
1/2 cup white sugar
2 (3.4 ounce) packages instant dry vanilla pudding mix (or any flavor!)
4 eggs
3 teaspoons vanilla extract
3 1/2 to 4 cups semisweet chocolate chips
2 cups chopped walnuts (optional)

Sift together the flour, baking soda,and salt; set aside.
In a large bowl, cream together the butter, brown sugar, and white sugar. (Using an electric mixer can be used in this recipe.) Beat in the instant pudding mix until blended, a little at a time. Stir in the eggs and vanilla. Blend in the flour mixture, a little at a time. Finally, stir in the chocolate chips and nuts. (If you refrigerate the dough next, it will be easier to handle and prevent spreading. You can use parchment paper on cookie sheet, too. They do not spread much, so they can be put on cookie sheet somewhat close together.) Drop cookies by rounded spoonfuls onto ungreased cookie sheets. (Make sure the pans are at room temperature or the cookies will flatten.)
Bake in 350 degree oven for 9 to 12 minutes. Edges should be golden brown.
