1/4 cup green pepper, chopped
1 small onion, chopped (I only add 1/4 cup)
1/2 cup dry bread crumbs
salt and pepper to taste
2 cups tomato sauce
1 1/3 cups minute rice
1 c. water
1 c. cheddar cheese, grated
Combine beef, green pepper, onion, bread crumbs, salt, pepper, and 1/2 cup tomato sauce. Mix well. Pat into bottom and sides of a greased 9" square pan. Combine remaining tomato sauce, rice, water, and 1/2 cup cheese. Spoon mixture into meat shell. Cover and bake at 350 degrees for 25 minutes. Top with remaining cheese. Bake, uncovered, for 10-15 minutes longer.
Delicious combination of flavors and ingredients in one dish!
