Baked Rice Pudding

3 eggs
2 1/2 c. milk
3/4 c. sugar
1 tsp. vanilla
1 c. cooked rice
1/2 c. raisins (if desired)

Spray or grease an 8x8-inch pan or 1 1/2 quart square casserole dish. In a bowl, beat eggs. Slowly add milk. Now add sugar, vanilla, and rice. (You may add raisins now, if desired.) Pour into pan.Set pan in a 9x13-inch pan. Add 1 inch of water. Bake at 325 degrees for 1 1/2 hours. Remove from oven. Mix together: 1/4 tsp. nutmeg and 1/2 tsp. cinnamon. Dust on top of the pudding. Remove pudding from pan. Cool and eat!
