Easy Napoleons


Box frozen puff pastry
4 oz. box of instant vanilla pudding (OR chocolate pudding)
8 oz. Cool Whip
2 pints strawberries, thinly sliced

Thaw pastry sheet according to box directions. Use a pizza cutter to cut sheet into 9 equal squares. Bake according to directions. Watch closely. While baking, make pudding according to box directions. (It will be thicker, if you use a little less milk. When we made it with the amount on the box, it was a little too soupy. Also, let the pudding thicken in the refrigerator for a bit before adding Cool Whip.) Mix pudding with Cool Whip. Layer as in picture. Sprinkle lightly with confectioner's sugar. (There was a lot of the pudding mixture left over, so I served it with the Napoleons, and people added it on top. I also put a dab of Cool Whip on top of the strawberries before I put the second pastry piece on top. I put them all together on a platter and put a piece of strawberry on top of each after I dusted with confectioner's sugar. I shook the confectioner's sugar through a grater so it wasn't so messy.) These were delicious and so fancy-looking and pretty! We made them for my mother's birthday, and she loved them!
VARIATIONS: Use vanilla pudding and use fresh peaches OR use cheesecake pudding and sprinkle with blueberries.
