CHOCOLATE ECLAIR DESSERT
Serves: 12-15
Crust:
1 c. water
1/2 c. butter or marg.
1 c. flour
4 eggs
Filling:
1 lg. pkg. instant vanilla pudding (I use sugar free)
2 1/2 c. milk
8 oz. softened cream cheese
Topping:
1 med. container Cool Whip
Chocolate syrup
For crust: Bring water and butter to a boil. Remove from heat. Stir in flour. Add eggs, one at a time, beating after each one (with a wire whisk or mixer). Spread in greased jelly roll pan. Bake at 400 for 15-20 minutes. Cool.
For filling: With an electric mixer, mix pudding with a little of the milk at a time (about 3/4 cup to begin with) and the SOFTENED cream cheese. When cream cheese is blended in well, add the rest of the milk and whip about a minute or two. Spread over crust. If crust has formed bubbles, take a knife and slit the bubble so the filling will lay on top of it.
Top with container of Cool Whip, spreading to cover. Refrigerate. When ready to serve, cut in squares and place on serving plate. Drizzle each plate with chocolate syrup. Make it pretty by drizzling all over the dessert AND plate in a zig zag fashion. It's fun to let each person decorate their own piece.
This is my "Go To" dessert recipe for a crowd. It's also my "Go To" dessert for diabetics because I always make it with sugar free pudding. Remember, there is no sugar in the crust either! It's absolutely delicious and refreshing.
CHEESE DIP FOR FRITOS
2 cups finely shredded cheddar cheese
1 cup mayonnaise
1 can drained Rotel (use only the lumpy part)
2 TBS Worcestershire sauce
Mix together and serve with Fritos! This is SO FAST AND EASY and ABSOLUTELY DELICIOUS so be careful, you just might eat the whole bowlful! It would also be good served with green pepper strips or celery. But it's best with Fritos!
THE WORLD'S BEST COLESLAW
This recipe was originally entitled WINTER SALAD, but I don't want you to get the wrong idea... I think it's best SERVED AND EATEN IN THE SUMMER, for it has fresh fruit in it and makes you feel like you're basking in the sun! Yum!
Approximately 5 cups shredded cabbage
1/2 - 1 cup chopped celery, to taste
1/2 - 1 apple, chopped
1 cup red seedless grapes, cut in half
3/4 cup drained pineapple tidbits
Dressing:
1 cup mayonnaise
1 - 2 TBS sugar or sugar substitute, but sugar is best
1 TBS milk
Combine with wire whisk and toss with other ingredients. Chill and enjoy! Tastes great leftover too.
EASY POTATO CASSEROLE
6-8 med. potatoes, peeled and diced
1/3 c.(5 1/3 TBS) butter, melted
1 envelope dry beefy onion soup mix
1 c. water
Place potatoes in 9x13 baking dish. Pour butter over potatoes and sprinkle with soup mix and pour water over all. Cover and bake at 350 for 1 hour. Remove cover after 1/2 hour and stir. Leave uncovered for last 1/2 hour.
I love this because it's comfort food and I almost always have these ingredients on hand!
CHOCOLATE CHIP DATE CAKE
This is more like a coffee cake. I make this every year for a cake walk we have at an annual event and it's always the first one to be chosen by those familiar with it. It's extremely moist, especially when refigerated and served cold. It's also best that way because you notice the chocolate chips more. So be sure to refrigerate it before eating it! It's also FAST and EASY and doesn't require a frosting. It has it's own topping, but all in one step!!! Serve with a huge dallop of whipped cream!
In a medium size saucepan, bring to a boil and let cool:
1 cup water
1 cup chopped dates
1 tsp. baking soda
In large mixing bowl, with electric mixer, cream:
1/2 cup shortening
1 cup sugar
2 eggs
Then add:
1 1/2 cup flour
3/4 tsp. baking soda (yes, that's a second time)
pinch of salt
and the date mixture.
Pour in greased 9x13 pan.
Top with:
1/2 c. sugar
1 c. chocolate chips
1/4 cup chopped pecans
Just sprinkle these on top in order given.
Bake at 350 for 22-30 minutes. Cool and refrigerate before serving.
Serve cold with Cool Whip or Whipped Topping from a can.
