JEANNIE SAYS, "This is a favorite of mine, because it is so easy and can be made last minute. The ingredients are always things I have on hand!"

MISSION IMPOSSIBLE PIE

3/4 cup sugar
1 tsp. vanilla
1/2 cup Bisquick
4 eggs
2 cups milk
1/2 stick butter
coconut

Put all ingredients in a blender. Blend for 3 minutes. Pour into a greased pie plate. Sprinkle generously with coconut. Bake at 350 degrees for 35 to 40 minutes. (I cover it lightly w/foil for the first half of baking to prevent excessive browning.)
