The 16-yr.old Birthday Girl and her Baker! (Recipe follows!)

ALICIA TURNS 16!!
At Alicia's 16th Birthday Party, my older 19 - year old
daughter made some special homemade cupcakes for her
that melted in your mouth, and were sooo delicious!
They were the biggest hit! Alicia loved the special

surprise from her big sister and the many people who showed
her so much love just like all her other birthdays! Below is the
birthday girl and her sister the baker and all the guests!



(It was hard for her to smile, because
her braces hurt so much that day!)


She loved her new electronics, clothes,
goodies, lots of money and gift cards, etc.


Her Mom and Dad and Grandparents and Aunts and Uncles and cousins
would NEVER miss a birthday to honor our special treasure!!

Now I know you are waiting for that mouth-watering,

melt-in-your-mouth recipe, so here it is!

Homemade S'mores Cupcakes
with Luscious Marshmallow Icing:


Cupcake ingredients:
18.25 oz. pkg. chocolate cake mix (no chocolate pudding in cake mix)
(Mandy used German Chocolate cake mix by mistake and it was so so delicious!)
Water, eggs, and oil to prepare cake mix
1 cup mini marshmallows
2-3 graham grackers, broken into bite-size pieces


Icing Ingredients:
4 sticks butter, softened
2 cups confectioners' sugar
1/4 tsp. salt
14 oz. jar marshmallow cream
2 tsp. vanilla extract

Decorations Needed and Prep:
1. Spice drops (OR gum drops) to make flowers. Cut drop in half. Flatten halves with finger or rolling pin sprinkled with granulated sugar. Arrange flattened spice drop "petals"; add unflattened spice drop half flower in center. Cut green drops in half and cut them into leaves if desired, and add a leaf or two to each cupcake.
2. Little tube red gel to make lines on baseballs
3. Little tube black gel to make marks on soccer balls
4. Orange food coloring and white frosting mixed together to frost cupcake to make
basketball, and thin brown icing tube squeezed out to make lines that are on a basketball.
(These little tubes are quite inexpensive in cheap grocery mark-down stores.)
Follow the example above of how to draw the pattern on to the balls. Or just look at the
right ball called for! Very easy!

Cupcake Directions:
Ok, here we go! Using standard size muffin pans, line each with a muffin cup, using about 24.
In a large bowl, combine cake mix, water, eggs, and oil. (The amounts are on the box.)Beat with electric mixer for 2 minutes.Spoon batter into baking cups only filling half way. Sprinkle only 3 marshmallows and then 3 graham cracker pieces in center. Cover with additional batter, filling baking cups 2/3 full. Bake at 350 degrees for 18-20 minutes or until toothpick inserted in center comes out clean. Cool cupcakes in pan on rack for 8 minutes. Remove from pan. Cool completely before icing.

Icing Directions:
In large bowl, beat butter with electric mixer until creamy. Gradually add sugar and salt; mix well. Add marshmallow cream and vanilla; blend well. Use immediately or refrigerate, covered, up to one week; bring to room temperature and lightly beat before using. (Makes 5 1/2 cups)

How to put on icing and decorate:
Use a small spatula and ice cupcakes nice and thick and neatly.
Now you will have a lot of fun decorating these cupcakes. Follow the directions under decorations above, and each are so easy to put together on top of the frosting. Place them
on a pretty plate all mixed up to look like an assortment to choose from!
They are so colorful and pretty! But most of all, they are one of the most delicious sweets I ever ate. Yummmmmm! Your children will LOVE them! Make sure you add their favorite sport!!
