1/2 cup chickpeas, rinsed
1 cup button mushrooms, washed, dried, and coarsely chopped
1 cup celery, washed, dried, and coarsely chopped
2 tablespoons olive oil and vinegar dressing
4 oz.deli-style chicken breast, cut in strips
4 oz. deli-style ham, cut in strips
3 oz. Swiss cheese, cut in cubes
3 oz. cheddar cheese, cut in cubes
Toss all ingredients together and serve!
Great summer salad! No need to turn the oven on during hot summer days! :)
