(Recipe from my sister-in-law to make for Mandy's graduation party! Sounds
incredible! She makes it all the time for her Supper Club! Serves 15-18 people easily)
Dressing mixed up the night before serving the salad:
1/2 c. sugar
Thinly sliced purple onion
2 TBSP. poppy seeds
1/2 tsp. dry mustard
1 TBSP. dry onion flakes
1 cup oil (I use about 3/4 c.)
1/2 cup balsamic vinegar
Next day when ready to mix salad:
1/2 head iceburg lettuce
1 bag fresh spinach (baby spinach is what I use & get either 1 large bag or 2 of those "regular" serving bags)
1/2 c. cottage cheese
1/2 c. shredded Swiss cheese
6-8 strips cooked bacon, crumbled
Mix all together right before serving & pour dressing over salad at last minute.
