1 3/4 cups brown sugar, divided
1 cup flour
3 Tbsp. plus 1/4 cup unsweetened cocoa, divided
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup skim milk
2 Tbsp. butter, melted
1/2 tsp. vanilla
1 3/4 cups boiling water
Mix together 1 cup brown sugar, flour, 3 Tbsp. cocoa, baking powder, and salt. Stir in
milk, butter, and vanilla. Pour into crock pot sprayed with non-fat cooking spray.
In a separate bowl, mix together 3/4 cups brown sugar and 1/4 cup cocoa. Sprinkle over
batter in the crock pot. Do not stir. Pour boiling water over mixture. Do not stir. Cover.
Cook on high for 1 1/2 to 1 3/4 hours, or until toothpick inserted into cake comes out clean.
Serves 8. 280 calories per serving. (Serve with low-fat ice cream or fat-free whipped topping,
if desired.)
