Stuffed Green Peppers (low fat)

(This recipe is from the cook book "Fix-it and Forget-it Lightly.")
1 lb. extra lean ground beef
4 large green bell peppers, tops removed, cleaned of seeds and cored
(Do not cut in half)
8 oz. can tomato sauce, divided
15 oz. can Spanish rice (OR 2 cups cooked rice with 2 Tbsp. salsa mixed in)
1 small onion, chopped
1/2 tsp. salt
1/4 tsp. pepper

Combine all ingredients, except 1/2 can tomato sauce. Stuff green peppers full.
Place green peppers in crock pot. Pour remaining tomato sauce over peppers in crock pot.
Cover. Cook on high for 4 hours. (340 calories each. Serves 4.)
